This egg industry study, based on insights from nearly 1,700 shoppers and sponsored by the American Egg Board, reveals valuable findings about consumer behavior, consumption habits, and opportunities for growth in retail egg sales.

A key segmentation shows that 38% of consumers are “heavy users,” eating eggs daily or every few days, but medium/light users are even more common—70% of consumers report enjoying eggs at least every week. On average, heavy consumers use eggs:

  • across multiple meal occasions
  • across snack occasions
  • because of nutrition and sustainability claims

In contrast, light and medium consumers primarily buy smaller packs, use eggs less frequently, and are less influenced by nutrition or sustainability claims. Promotions, brand loyalty, and pack size variety can help increase engagement.

Despite concerns about grocery prices, eggs maintain strong appeal: 91% view them as affordable protein. Eggs remain dominant at breakfast and other meals, but as younger generations experiment with snacks and diverse cooking, platforms like YouTube, TikTok, and Instagram bring eggs into snacking—the next growth frontier.

Health and wellbeing perceptions are strong: 87% of consumers see eggs as part of a balanced diet. And sustainability continues to shape purchasing too, with 40% of consumers citing eco-friendly production and fair labor as reasons to buy.
